- lemon juice or a drizzle of vinegar
- shredded parsley

Recipe for hazelnut butter.
The hazelnut butter sauce is ideal with boiled fish such as skate, sole (etc.) but also with hard-boiled eggs and boiled vegetables such as cauliflower.
Melt the butter in a saucepan put directly on the fire.
Let it cook until it takes the desired color, blond more or less dark. Remove from the heat.
Carefully add the lemon juice or a drizzle of vinegar, salt and chopped parsley.
Caution: the more butter is cooked, the less digestible it is!
